Description of Our Community: Kaohsiung is located in the southwest part of Taiwan. Due to her geological advantages, Kaohsiung is a famous seaport with many industrial and fishing activities going on. As a result, many people make livings by catching fishes. One of these fishes is mullet. The real economic value for mullet is not mullet itself but the roe inside the fish because the roe can be preserved as mullet roe for it is a yummy dish for people in Taiwan. Kaohsiung was and still is the hub for producing mullet roe. That is the reason why our team choose this as our topic to look into.

Project Description: The title of our project is "The Black Gold in the Sea of Taiwan: The Mullet Roe." In many Taiwanese dishes, mullet roe is so delicious that with a slice of apple or white radish it is one of the tastiest cuisines on the dinner table. Catching mullets used to be a profitable business, but with many low-class or fake mullet roe this industry is going down. We notice the unbalance of supply and demand in this business. Therefore, we try to dig deeper the reason why this unbalance happen. This motivates our team to look into this industry vertically from catching mullet to producing mullet roe. Hopefully, we can let more people know about mullet roe and prosper this local specialty.
