1. Description of Our Community
Located in No. 592, Section 1, Shetou Road, Shetou Township, Changhua County, Shinhochun Soy Sauce was founded by Mr. Tu-chiang Chang in Japanese Taishou Period and has been taken over by the third generation Mr. Shih-ming Chang through the past until now. This shop has been inherited for 100 years and the traditional brewing method has been kept in mind. Shinhochun adheres to the traditional hand making and moral operation rule and stays consistent throughout the way. Even in 1953, Shinhochun took part in the contest of production and construction exhibition and review in Changhua County and was awarded the first prize. In product packaging, following the style in pioneering period, Shinhochun is permeated with antique styles and is the shop with the longest history in Changhua County.By taking this opportunity of making Cyberfair project, we actually visit and interview Shinhochun to understand Mr. Shih-ming Chang’s persistence and care for the quality of making soy sauce; through soy sauce DIY, we have realized how much efforts and time have to be spent to make a bottle of good soy sauce.Before making the Cyberfair project, I don’t know that there is a soy sauce factory in Changhua. Through the research by our team, we now know that the natural brewing soy sauce with the traditional methods takes very long time in making and the mass production within a short time cannot be realized. Mr. Shih-ming Chang makes the contribution and dedication in silence for consumers’ good flavor and healthy eating. It is our intention to continue and inherit this moral brand through the power of Cyberfair.
2. Summary of Our Project
Generally speaking, “soy sauce” may be merely an ordinary noun. In everyday life, everyone will more or less use or eat it. However, in recent years, the food safety problems emerge one after another. Thus, the public are filled with emotional thoughts and wonder where to buy the soy sauce which can be eaten securely.With the data sorting, visit and interview in Cyberfair project, we understand that no chemicals are allowed to be added in the making process of “natural brewing soy sauce”. However, compared with the ordinary soy sauce containing chemicals in the market, Shinhochun Soy Sauce has the higher cost and its mass production cannot be realized, which is unfavorable to the general enterprise’s operation.Shinhochun bears the mission of passing down the 3-generation “century-old shop” and has no more money used for marketing and advertising. Mr. Shih-ming Chang adheres to the idea of “quality first and assure consumers”, so that this sign of Shinhochun is able to be operated continuously in Shetou, a countryside in Changhua. Therefore, we would like to introduce the operation philosophy, idea and making method of Shinhochun to all of you.

4. Problems We Had To Overcome
Coming up with many titles, but having no idea about which one is suitable.Through the viewing of the previous works and the preliminary data collection, find out which title is suitable for our discussion and discuss the contributions of project making to the local place.Quiz, monthly exam and the sectional exam after summer vocation have occupied much time and we have no more time to do the project.To overcome the time problem, we make use of the lunch break and the 30 minutes after class every day to discuss and communication with each other; in May, we begin to carry out the project and make preparations in advance.How to do so many jobs, such as visit, interview, soy sauce DIY, photo taking, etc.Firstly, each group in charge should think about the work procedures, visit contents, questionnaire survey table and the angle of taking photo and do the jobs above well; think over in mind the work you are responsible for; make use of summer vocation to complete this important job.
5. Our Project Sound Bite
Making Cyberfair project is laborious and lengthy and the process cannot be rushed. Only if everything is indeed done well, a good project can be accumulated slowly. At the beginning, everyone works out the title; then a great amount of data is collected widely. We have spent lots of efforts and time on the preparation work before the visit and interview. In the end, the data summary and editing, photo’s sorting and hitting the shelf, as well as the writing of afterthought are all completed by all the team members with the joint cooperation and solidarity.All the students in the item of interview are divided into 4 roles of boss, employee, neighbor and customer. We would like to understand Shinhochun from the different perspectives and different persons, and only this method can be used to objectively write out this Cyberfair project. They visit the Shinhochun just for the sake of one simple idea of “century-old inheritance” and hope that this idea can be continued seriously.
6. How did your activities and research for this CyberFair Project support standards, required coursework and curriculum standards?
We know that each step of soy sauce brewing is almost similar, but they will be adjusted (for instance, fermentation steps require 120 days in summer and require 180 days in winter) according to the change in climate (such as, change in temperature and humidity).We make use of Microsoft Excel to make questionnaire table, so that everyone can understand the questionnaire results more rapidly.Data sorting and the understanding of the culture and history; know about the geographical environment in the hometown through the actual visit and interview.Collect and sort out data, write the webpage contents and text as well as write the afterthoughts; improve our ability of language organization.
